Smokehouses are a common feature around Natchez, but there is no evidence that this structure was ever used to smoke meat. No remnant of salt or ash has been found in the soil beneath the building. There were no beef cattle or hogs raised at Melrose. The processing of meat products was probably done on a plantation and brought to the estate. It is likely that the McMurrans used this building for food storage.

 A well-worn dirt path led back away from the courtyard. It connected the mansion with the white wooden slave cabins and other working parts of the property.
