Cow Parsnip

After a winter diet of dried fish and preserved berries, the Huna Tlingit look forward to the emergence of fresh greens in spring, especially yaana.eit. Also called “wild rhubarb,” or “Indian celery,” the tender peeled stalks can be eaten raw or cooked, though care must be taken. If touched without peeling the stalks, cow parsnip can cause skin reactions.
