Soldiers mostly ate canned and preserved foods. To supplement their diet, wives and children of the officers tended a garden. They grew fresh vegetables and herbs like sage, basil, and parsley for seasoning and for medicinal purposes.

The Officers’ Garden is a recreation of an 1860s garden and is currently maintained with the assistance of the River Valley Master Gardeners.
