Camping Recipe: Freezer Breakfast Burrito
Ingredients

12 eggs
-
1 lb. of bacon (optional)
-
1 lb. of breakfast sausage (optional)
-
1 lb. hash browns or breakfast potatoes (frozen or make your own!)

1 16 oz. jar of green chili
-
10-12 flour tortillas
-
Shredded cheese
-
Green onions (optional)
-
Olive oil
-
Salt (to taste)
-
Pepper (to taste)
Directions

Heat oil in large skillet over medium-heat

Cook your breakfast potatoes until golden brown

In a separate pan, begin cooking bacon and/or sausage to desired doneness

In a large bowl, whisk together eggs to scramble. Stir in chopped green onion (optional)

Once the potatoes are done, remove from skillet or add your scrambled eggs

Continue cooking until eggs are cooked through

Spread your tortillas out
-
Evenly distribute eggs, hash browns, and meat into burritos

Top burritos with desired amount of cheese

Top with desired amount of green chili
-
Salt and pepper to taste

Roll up burritos and wrap with foil
-
Enjoy immediately or freeze for another time
