Alcatraz Field Collection
Standard “Main Line” menu, served in the Alcatraz mess hall, to all inmates except those in solitary confinement or in the prison hospital. Bureau of Prisons and Public Health Service nutritionists in Washington approved cyclical menus that ensured both good nutrition and considerable variety. Menus and recipes were similar to those in the military.
